Nabe (Hot pot) with Chicken with Enoki Mushroom Balls&Sardine with Broad Beans Balls


Nabe is a Japanese style fondue or hot pot cooked in a ceramic pot and served at the table. 
This is a popular family/party winter menu.
Nabe also works in the cool British summer. 
Received a pretty guest from Paris so we had a nabe party.

Ingredients of Nabe

  • Nabe stock (2-3L of cold water and 15-20cm of konbu seaweed) , 3 tablespoon of soy sauce, sake each
  • Winter cabbage or Pack choi
  • Spring onion
  • Seasonal veggies
  • Fish, meat, chicken
  • Tofu
  • can add anything you like

Ingredients of Nabe dip sauce

  • 3 tablespoon of soy sauce
  • 2 tablespoon of mirin
  • two bunches of thinly chopped spring onion
  • 1 tablespoon of lemon juice


Direction

1) Preparing nabe stock 

1. Add 2-3l of cold water and 15-20cm length of konbu (sea weed) into a hot pot. Allow it to rest for 30-40 mints.
2. Add soy sauce and sake and then bring it to boil. 
  • The stock is prepared with Konbu
  • The right bottom is Chilli Oil (click for the recipe) is an essential seasoning for my Nabe style 

2) Add ingredients

3. Add vegetables to cook by closing the lid. Once veggies are ready, add fish or meat.

3) Serve nabe at the table 

with nabe sauce and some other dips such as chilli oil


4) Finish the stock with Udon!!

The stock gained the depth of flavour from all the veggies, chicken and sardine. The sharp hint of black pepper completes the luxurious flavour.

Chicken Balls with Enoki Mushrooms

Ingredients

  • 2 pieces of chicken thigh
  • 2 teaspoons of grated ginger
  • 1 tablespoon of sake
  • 1/2 teaspoon of salt 
  • 1 tablespoon of corn flour
  • 80g of Enoki Mushroom

Directions

1. Cut chicken thigh roughly and add all the ingredients except enoki into a food processor to blend for 20-25 seconds. Try to remain the texture of chicken or alternatively beat the mix over a cutting board.
2. Cut Enoki into 5-6 cm length. Put the processed chicken mix and enoki into a bowl and mix them well with a hand. Then make large bite sized balls
3. Boil some water in a deep pan and cook the chicken balls for 1 min and take them aside in a dish. Add into the pot to cook completely.

This chicken balls can be frozen and be used for soup and other ingredients. Very useful item.


Sardine Balls with Broad Beans

Ingredients

  • 2-3 pieces of sardine fillet
  • 1 teaspoon of miso
  • 2 teaspoons of grated ginger
  • 1 tablespoon of cornflour
  • A handful of broad beans, peeled

1. Blend sardines with miso, grated ginger,cornflour for 30 seconds 
2. Add broad beans into the sardine mix
3. Scoop a bite sized sardine mix portion with a spoon and drop it in the boiling hot pot
4. Serve balls with nabe sauce.


Nabe gathers people, warms them up and thereby generates nice conversations!
It's a fun to have nabe also as we can take lots of veggies, is very healthy.


Time to prepare: 50 mins
Total cost: 6 pounds (1.5 for chicken, 1.5 for sardines, 2 for all other veggies, 1 for udon noodles)
